Yesterday was an ikky raining day and we even had a thunderstorm in the after noon . In the morning it held off long enough for Miggy and I to take our daily walk but then just after we made it in time before it poured. Today it is to be sunny and warm I think the weather people are on some wacky tobaccy as it is foggy and rainy right now this weather is soo out of whack every where.
Any who on to Papas sweets . I am not much of a baker but on the occasion I like to whip up something mainly for Papa as he has a sweet tooth and to be honest I don't need it , only goes to the hips and butt with me , don't get me wrong I wont deprive myself of the sweets just wont feast on them as he does lol
Vanilla Blueberry Cove cake
It was easy all ya need is . Vanilla Betty Crocker extra moist cake mix , two containers of Whipped vanilla icing and a tin of E.D Smith blueberry pie filling .
Mix cake as directed on the box then pour in two round 8 inch cake pans and bake at 325 F for 32 min I do the old tooth pick trick to see if it is done lol then let cool in pan for 10 min on wire racks, then the first cake layer place on cake plate top down then frost with whipped icing and half the tin of pie filling the left over pie filling you can use in pancakes, on top of ice cream and so on or store it in the fridge in a covered container for no longer then 4 days, then add the second cake layer and finish icing , do the sides first as some of the blueberry filling wants to ooze out this way it keeps it in , it can get a little messy at times during the frosting process . After you have finished frosting the cake put in the fridge for an hour to set the frosting a bit but mainly to set the blueberry pie filling and that helps stop it from being so runny, after the hour cut and enjoy , you can store it on the counter with a loose cover .

Oh, Elaine.. That's looks like a cake my Gram used to make.. Of course, she wasn't blessed with such a lovely easy way to make it.. It looks delicious and I know my hubby would love it too..
